I have recently begun the journey back to healthy living. Moving to Chicago has been fun and the food has been great. That said, my waistline has expanded to a point where I am no longer comfortable with claiming the “Chicago Freshmen Fifteen” – after all once the number is more like 30 you’re in a committed relationship with weight gain.
That said, it’s not that I don’t know how to eat well, I’ve just been lazy. This weekend I searched for some new recipes and since it’s still cool in the city I decided that I wanted something that would be good for me and still be “comfort-food”.
I found three that I thought would be fun and and I’m featuring one here today.
Vegan Eggplant Meatballs
Before you turn your nose up at it, know this, my wife also turned her nose up at it originally and well, let’s just say it was unwarranted.

I have a couple things to say about this dish:
- Unless you’re a sous-chef 15 minutes is a REALLY aggressive estimate on prep time. There’s a lot of dicing and sautéing before you get to the baking time.
- Read all the directions – I know, that’s standard but we forget and there’s a 10 minute soaking process which is INSTRUMENTAL to the success of this recipe.
- Believe them when they say use a whole medium onion. I chickened out and only used 1/2 because it seemed like a lot but alas, I was wrong.
So how did it turn out?
FABULOUS! I admit, I picked it because I wanted to get right back into the mainstream swing of eating mostly vegetarian/vegan but man, they are great. The next day they were great too. This one, while a little involved and time-consuming for the output, is well worth it. Next time I’m going to double the recipe so I have more leftovers!
